Springtime brings an abundance of greens to us eating seasonal, local produce. So what to do when you are sick of chomping on salads? Make tacos!
Head lettuce leaves pull apart perfectly to make a grain-free low-carb taco shell. One nice head of lettuce should offer enough wraps for 2 people.
This is a simple dinner for nights when you are short on time and ideas. Cook up some meat of choice, or beans if you wish to keep things meatless. Then prep the fixens. Use whatever veggies are seasonally available. In spring when tomatoes are not available, we like to use salsa that was canned from last year. Cilantro is great, as are sliced radishes or salad turnips, diced onions or scallions, diced peppers, and of coarse shredded cheese or sour cream.
To make it easier at nighttime, you could prep all the veggie and cheese fixens ahead of time and just cook the meat just before you are ready to eat.
