A wonderful way to add veggies to your day..with breakfast.
French Breakfast Radish Scramble
Pad of butter
1 bunch of radishes with tops
1 small onion, chopped
Herbs of choice, we really like dill with this
Put a small skillet on medium heat and add butter and onion and a dash of salt and let sweat.
Slice the radishes and add to the skillet. Finely chop the radish greens.
Crack the eggs into a bowl and beat. Add optional herbs to the eggs and mix in. If using fresh herbs, chop them finely first.
Turn the heat down to low and add the greens to the skillet and gently wilt, for about a minute. Add eggs and cover skillet with a lid.
Once the eggs are nearly set top eggs with optional cheese, grated. Return the lid and turn off the heat. In a few minutes the eggs should be set and cheese melted. Serve and enjoy, serves 2 adults.
