Are you looking for a new way to cook sweet potatoes? Here is a simple recipe that can be prepped ahead of time to make weekday dinners simpler. Can stand alone as a nice lunch, as well.
2 medium sized sweet potatoes
6 oz marinated feta. (I love the marinated goat feta from Prodigal Farm)
1/2 c. Kalamata olives
(First step can be done in advance of meal.) Preheat oven to 400• Cut well-scrubbed and unpeeled sweet potates into bite sized pieces. Place on a greased baking dish in an even layer and cook the sweet potatoes in the oven till fork tender. Allow potatoes to cool before advancing to next step.
Find some nice salad greens of your choosing. We really like the bite of arugula in this recipe, but a spring mix or lettuce mix would work well too. Be sure to wash your greens again for extra precautions.
Cut or crumble your feta cheese and cut your black olives and remove any pits that may be present. Toss greens, cheese, olives, and sweet potatoes in a bowl and serve.
